Pastry Commis — Al Ain
PDL Coffee Co is seeking a motivated Pastry Commis to join our Al Ain kitchen. This entry‑to‑mid level role supports pastry production, daily prep, and plated desserts that complement our specialty coffee program.


Duties and Responsibilities

  • Prep and Production — Prepare pastry components, doughs, batters, fillings, and sauces according to recipes and production schedules.
  • Baking and Finishing — Bake, glaze, assemble, and plate pastries and desserts with consistent quality and presentation.
  • Mise en Place — Maintain mise en place for service; ensure stations are stocked and organized for efficient workflow.
  • Portion Control and Consistency — Follow recipes, portion sizes, and plating standards to ensure uniformity across shifts.
  • Equipment and Station Care — Clean and maintain pastry equipment, ovens, and workstations; report faults to senior kitchen staff.
  • Inventory and Waste Management — Assist with stock rotation, receiving deliveries, and minimizing waste through proper storage and labeling.
  • Hygiene and Safety — Adhere to food safety, hygiene, and allergen procedures at all times.
  • Team Support — Work closely with the Senior CDP and Head Chef; assist with basic pastry training for junior staff when required.

Requirements

  • Experience — 0–2 years in a pastry or bakery role preferred; culinary school or pastry course is an advantage.
  • Skills — Basic baking techniques, attention to detail, good knife skills, and ability to follow recipes precisely.
  • Attributes — Reliable, punctual, able to work under pressure, and eager to learn.
  • Availability — Flexible shifts including early mornings, weekends, and public holidays.
  • Language — Proficiency in English; Arabic is an advantage.
  • Legal — Right to work in the UAE and ability to commute to Al Ain.
  • Certifications — Food safety or hygiene certification is a plus.
