Sous Chef Jobs in Dubai – AURA Skypool, Palm Jumeirah
AURA Skypool is seeking an experienced Sous Chef to help lead the kitchen at its iconic rooftop venue on the 50th floor of The Palm Tower, Palm Jumeirah. Part of Sunset Hospitality Group, AURA serves a contemporary menu spanning Mediterranean, Middle Eastern and Asian influences to a high-volume, international guest base.
Reporting to the Head Chef, you will oversee daily kitchen operations, drive consistency across every dish, and lead, train and develop the brigade. You will also take ownership of food cost, ordering, portion control and HACCP compliance, and run the kitchen in the Head Chef’s absence. This role suits a hands-on, well-organised culinary leader with strong technical skills and the temperament to keep a large kitchen calm and sharp through peak service.
Duties & Responsibilities
- Support the Head Chef in managing all daily kitchen operations and food production
- Ensure consistency of recipes, quality, plating and presentation across the entire menu
- Supervise, train, mentor and schedule chefs de partie, commis and kitchen staff
- Manage food costs, ordering, portion control, stock rotation and wastage
- Lead service on the pass, expediting orders and maintaining ticket times
- Contribute to menu development, seasonal specials and event menus
- Ensure full compliance with HACCP, Dubai Municipality food safety and hygiene standards
Requirements
- Minimum 3 years’ experience as a Sous Chef in premium restaurants, beach clubs, hotels or lifestyle venues
- Strong culinary skills across multiple cuisines with excellent plating and consistency
- Proven leadership, training and kitchen-management experience with large brigades
- Solid knowledge of HACCP and UAE food safety regulations; certification preferred
- Good commercial understanding of food costing, ordering and inventory
- Ability to perform under pressure in a high-volume, fast-paced kitchen
- UAE experience preferred; flexibility to work shifts, weekends and public holidays
