PDL Coffee Co is looking for a skilled and reliable Senior Chef de Partie to lead a section of our kitchen at the Al Ain café. This role combines hands-on cooking, section leadership, and quality control to ensure consistent, high-standard food service that complements our specialty coffee offering.


Duties and Responsibilities

  • Section Leadership — Run a designated kitchen station independently; plan and execute dishes to menu specifications.
  • Food Preparation and Cooking — Prepare, cook, and plate menu items with consistency, speed, and attention to presentation.
  • Quality Control — Maintain portion control, taste profiles, and plating standards; ensure every dish meets PDL quality expectations.
  • Training and Mentorship — Coach junior cooks and commis; demonstrate techniques and enforce kitchen standards.
  • Inventory and Stock Management — Monitor stock levels for your section, assist with deliveries, rotate stock, and minimize waste.
  • Menu Support — Contribute to menu development and daily specials; provide practical input on preparation and costing.
  • Hygiene and Safety Compliance — Enforce food-safety procedures, maintain a clean workstation, and follow HACCP or local regulations.
  • Shift Coordination — Support the Head Chef and Supervisor with shift planning, handovers, and communication between kitchen and front of house.

Requirements

  • Experience — Minimum 3 years in a professional kitchen with at least 1 year in a Chef de Partie or senior cook role.
  • Technical Skills — Strong culinary technique, knife skills, and experience across hot and cold sections; ability to work to recipes and adapt under pressure.
  • Knowledge — Understanding of food safety standards and kitchen hygiene practices.
  • Qualifications — Culinary diploma or equivalent preferred; food-safety certification is an advantage.
  • Attributes — Leadership, reliability, attention to detail, and a collaborative attitude.
  • Availability — Flexible schedule including early mornings, evenings, weekends, and public holidays.
  • Language — Proficiency in English; Arabic is an advantage.
  • Legal — Right to work in the UAE and ability to commute to Al Ain.
