Sous Chef — HookahPlace, Dubai Creek Harbour, Dubai, UAE

HookahPlace MENA is hiring a Sous Chef for its new lounge opening at Dubai Creek Harbour this autumn. Working directly under the Head Chef, you will run the line during service, supervise cooks and kitchen assistants, and hold the standard on recipes, portioning and plating on every single plate that leaves the pass. Beyond service you will own daily mise en place, ordering, stock rotation and food cost control, and enforce HACCP and hygiene compliance across the kitchen. Because this is a new opening, you will also be involved in setting up the kitchen, testing dishes and training a team from scratch — an unusual opportunity to build systems rather than inherit them. We are looking for a leader who stays calm at volume and develops the people under them. A minimum of three to four years of kitchen experience, including at least one year supervising, is required, with current residence in Dubai.

Duties and Responsibilities

  • Run the kitchen line during service and supervise cooks and kitchen assistants.
  • Ensure consistency of recipes, portioning, plating and presentation on every dish.
  • Manage daily mise en place, ordering, stock rotation and food cost control.
  • Enforce HACCP, food safety and hygiene standards and complete all required logs.
  • Deputise for the Head Chef and assist with menu development, costing and staff scheduling.
  • Train, coach and appraise junior kitchen staff and support recruitment for the new venue.

Requirements

  • Minimum 3–4 years kitchen experience, including at least 1 year in a supervisory role.
  • Proven ability to lead a section or full line during high-volume service.
  • Strong understanding of HACCP, food costing and inventory management.
  • Good conversational English and the ability to train and motivate a team.
  • Experience with new openings or menu development is a strong advantage.
  • Currently based in Dubai; candidates with their own valid UAE visa will be given preference. Food safety certification is an advantage.

Benefits

  • Competitive salary package reflecting experience and leadership responsibility.
  • Involvement in kitchen setup, menu testing and team building for a new opening.
  • Career growth within an expanding international hospitality group.
  • Training and development support toward Head Chef level.
  • Young, multicultural and supportive team environment.
