SUSHISAMBA Dubai is seeking an experienced, confident Head Waitress to lead our service team and deliver exceptional dining experiences at a high‑energy, lifestyle restaurant. This role requires a natural leader who combines refined service technique with a warm, guest‑first attitude; you will set the tone for each shift, coach servers, and ensure every table receives attentive, timely and memorable service. The ideal candidate thrives under pressure, understands fine dining pacing and beverage pairing, and can translate menu knowledge into persuasive recommendations. You will work closely with management, the kitchen brigade and the host team to coordinate covers, manage service flow and uphold the brand’s standards for presentation, hospitality and guest recovery. This is a hands‑on leadership role with opportunities for professional development within a growing hospitality group.


Duties and Responsibilities

  • Shift Leadership: Lead the service team during shifts; assign sections, manage timing and ensure consistent delivery of service standards.
  • Service Excellence: Oversee order accuracy, plating checks and table maintenance; ensure courses are delivered in correct sequence and at appropriate intervals.
  • Training and Coaching: Mentor servers on menu knowledge, upselling techniques, wine and cocktail pairings, and guest interaction skills.
  • Guest Relations: Handle VIPs and complex guest requests; manage complaints with discretion and implement effective recovery actions.
  • Coordination with Kitchen: Communicate special requests, dietary requirements and timing needs to the kitchen; monitor ticket times and resolve service bottlenecks.
  • Operational Duties: Supervise side work, station setup and closing procedures; ensure cleanliness, presentation and compliance with hygiene standards.
  • Reporting: Provide shift feedback to management, record incidents, and assist with staff scheduling and performance reviews.

Requirements

  • Experience: Minimum 3–5 years in upscale dining with at least 1–2 years in a supervisory or lead server role.
  • Skills: Excellent communication, strong leadership, and proven ability to manage a team during high‑volume service.
  • Knowledge: Deep familiarity with fine dining service techniques, beverage pairing, and menu storytelling.
  • Technical: Comfortable using POS systems and reservation platforms; accurate cash handling and billing skills.
  • Presentation: Professional appearance and polished manner; exceptional phone and guest etiquette.
  • Languages: Fluent English required; additional languages are an advantage.
  • Availability: Flexible to work evenings, weekends and public holidays.
  • Attributes: Calm under pressure, detail oriented, proactive problem solver, and committed to continuous improvement.
