Assistant CDP

Pera Palace is seeking a skilled and motivated Assistant Chef de Partie (Assistant CDP) to join our growing culinary team in Dubai. This role is ideal for individuals with a strong foundation in kitchen operations who are ready to take the next step in their culinary career. As an Assistant CDP, you will support the Chef de Partie in preparing high‑quality dishes, maintaining kitchen standards, and ensuring smooth daily operations. You will work closely with senior chefs, contribute to menu execution, and uphold the brand’s commitment to excellence in every plate served.

Duties and Responsibilities

• Assist the CDP in preparing, cooking, and presenting menu items
• Ensure all dishes meet quality, portion, and presentation standards
• Support mise en place preparation for daily service
• Maintain cleanliness and organization of workstations
• Follow hygiene, safety, and food‑handling procedures at all times
• Assist in monitoring stock levels and reporting shortages
• Collaborate with the kitchen team to ensure smooth service flow
• Contribute to new dish ideas and menu development when required

Requirements

• Previous experience as a Commi or Assistant CDP in a restaurant or hotel
• Strong understanding of kitchen operations and cooking techniques
• Ability to work efficiently in a fast‑paced, high‑pressure environment
• Excellent attention to detail and commitment to quality
• Professional attitude, teamwork mindset, and willingness to learn
• Knowledge of food safety and hygiene standards
• Positive attitude and passion for culinary growth
