The Commis (Asian Cuisine) will work under the guidance of the Chef de Partie or designated Asian Cuisine Chef to assist in the preparation and execution of a wide range of Asian dishes. In this role, you will support the team by ensuring ingredients are prepped and meals are cooked to the highest standards, all while maintaining strict food safety and hygiene protocols. The ideal candidate is eager to learn, meticulous in their duties, and passionate about delivering authentic Asian flavors in a fast-paced environment.


Key Responsibilities:

  • Food Preparation & Cooking:
    • Assist in preparing and cooking a variety of Asian dishes including stir-fries, soups, dumplings, and other traditional specialties.
    • Properly chop, slice, and measure ingredients in accordance with established recipes and presentation standards.
    • Ensure precise portion control and consistent execution of dishes.
  • Station & Equipment Management:
    • Maintain cleanliness, organization, and readiness of your assigned cooking station, including specialized equipment such as woks, steamers, and fryers.
    • Ensure all tools and equipment are properly sanitized and stored after use.
  • Quality & Safety Compliance:
    • Uphold stringent food safety, hygiene, and sanitation standards in compliance with local health regulations.
    • Monitor and record cooking temperatures, ingredient freshness, and quality throughout meal preparation.
  • Team Collaboration:
    • Work closely with the culinary team to coordinate efforts during high-volume service periods.
    • Communicate effectively with fellow team members to address challenges and ensure the timely delivery of high-quality dishes.
  • Inventory & Maintenance:
    • Assist in the management of Asian-specific ingredients and supplies, ensuring proper storage, rotation, and inventory control.
    • Help with routine checks and maintenance of kitchen equipment, reporting any issues promptly.
  • Continuous Learning:
    • Participate in culinary training sessions and workshops to enhance your skills in Asian cooking techniques and trends.
    • Embrace feedback from senior kitchen staff and adapt to evolving culinary practices.

Requirements:

  • Education & Certification:
    • A high school diploma or equivalent is required; culinary certifications or specialized training in Asian cuisine is a plus.
  • Experience:
    • Previous experience in a kitchen, particularly in sections specializing in Asian cuisine, is preferred.
    • Exposure to fast-paced culinary environments with a focus on quality and efficiency is highly regarded.
  • Skills & Abilities:
    • Solid foundational knowledge of Asian spices, ingredients, and cooking methods.
    • Excellent knife skills and familiarity with basic culinary techniques.
    • Ability to work under pressure while maintaining attention to detail and high standards.
    • Strong communication skills and a collaborative mindset.
  • Working Conditions:
    • Must be capable of working on your feet for extended periods in a high-temperature kitchen environment.
    • Flexibility to work various shifts, including evenings, weekends, and public holidays.
