Sous Chef – Bakery Team, Fine Dining Restaurant, Dubai

We are seeking a highly skilled and passionate Sous Chef – Bakery Team to join one of Dubai’s most prestigious fine dining restaurants. As a senior member of the bakery section, you will support the Head Baker in overseeing daily production, ensuring exceptional quality, and maintaining the highest standards of consistency, creativity, and presentation.

This role is ideal for a bakery professional with strong technical expertise in breads, pastries, doughs, and specialty baked items. You will lead a team of bakers, manage production schedules, and contribute to menu development while ensuring smooth operations in a fast‑paced, high‑standard kitchen environment.


 

📝 Duties & Responsibilities

  • Assist the Head Baker in managing daily bakery operations
  • Supervise and guide bakery staff, ensuring smooth workflow and high productivity
  • Prepare and oversee production of breads, pastries, doughs, and specialty baked items
  • Maintain exceptional standards of taste, texture, and presentation
  • Ensure accurate mise en place and timely preparation for service
  • Participate in recipe development, menu planning, and seasonal creations
  • Monitor stock levels, ordering, and proper storage of bakery ingredients
  • Ensure compliance with HACCP, hygiene, and safety regulations
  • Train and mentor junior bakers to enhance skills and performance
  • Collaborate with other kitchen sections to ensure seamless coordination

Requirements

  • Minimum 2 years of experience as a Sous Chef or Senior CDP in a bakery section within a fine dining restaurant in the UAE
  • Strong technical knowledge of bakery production, dough fermentation, pastry techniques, and baking science
  • Excellent leadership, communication, and organizational skills
  • Ability to work under pressure in a high‑volume, high‑standard environment
  • Strong understanding of food safety, hygiene, and kitchen operations
  • Culinary or bakery certification preferred
  • Creativity, precision, and a passion for artisanal baking
