This role involves assisting the Chef de Cuisine, leading kitchen staff, and contributing to menu innovation while maintaining top-tier food safety and efficiency.

Responsibilities:

  • Assist the Chef de Cuisine in overseeing daily kitchen operations and food preparation.
  • Supervise kitchen staff, ensuring efficiency and adherence to quality standards.
  • Maintain food safety and hygiene protocols, ensuring compliance with HACCP guidelines.
  • Collaborate in menu development, introducing new dishes and seasonal specialties.
  • Monitor inventory levels and food cost management to optimize efficiency.
  • Ensure consistency in flavors, plating, and presentation across all dishes.
  • Lead kitchen shifts and oversee food production during peak hours.
  • Support training and mentorship of junior kitchen staff.

Requirements:

  • Proven experience as Sous Chef in a high-quality restaurant, preferably with expertise in Mexican cuisine.
  • Strong culinary skills with knowledge of traditional and modern Mexican cooking techniques.
  • Ability to manage kitchen staff and work efficiently in a fast-paced environment.
  • Understanding of food cost management, inventory control, and supplier coordination.
  • Knowledge of HACCP and food safety regulations.
  • Creativity in plating and menu innovation.
  • Excellent leadership and communication skills.
