Commis (Hot kitchen)Position Summary:

We are seeking a motivated and detail-focused Commis (Hot Kitchen) to join our culinary brigade. Working under the direct supervision of the Chef de Partie or Sous Chef, the successful candidate will be responsible for assisting in all aspects of food preparation and cooking within our busy hot kitchen. This role demands a keen eye for detail, a commitment to maintaining high standards of hygiene and safety, and a genuine passion for the culinary arts. The Commis will play a vital role in ensuring timely, consistent, and high-quality dish preparation in a fast-paced environment.


Key Responsibilities:

  • Food Preparation & Cooking:
    • Assist in preparing ingredients (chopping, slicing, dicing) and cooking dishes under guidance.
    • Execute assigned cooking tasks while adhering to recipes, portion controls, and presentation specifications.
  • Station & Equipment Management:
    • Maintain cleanliness and organization at all cooking stations, ensuring equipment is properly used and cleaned.
    • Monitor and record food temperatures and quality during preparation and service.
  • Quality & Safety Compliance:
    • Ensure compliance with all food safety, hygiene, and sanitation standards as set by local health regulations.
    • Identify and report any discrepancies or potential issues related to food quality and safety.
  • Team Collaboration:
    • Coordinate with the culinary team during high-volume periods to guarantee a seamless workflow.
    • Communicate effectively with team members to uphold the efficiency and professional standards of the department.
  • Inventory & Maintenance:
    • Assist in the management and storage of supplies and ingredients while observing stock levels.
    • Support periodic kitchen maintenance checks and report any equipment malfunctions.
  • Continuous Learning:
    • Participate in training programs and upskill under the mentorship of experienced chefs.
    • Embrace feedback and adapt to evolving culinary techniques and best practices.

Requirements:

  • Education & Certification:
    • High school diploma or equivalent; a formal culinary certification is a plus.
  • Experience:
    • Previous experience in a hot kitchen environment is desirable. Experience in similar roles within a fast-paced setting is highly valued.
  • Skills & Abilities:
    • Basic culinary skills with an understanding of knife handling, various cooking techniques, and food presentation standards.
    • Exceptional attention to detail and a strong commitment to maintaining food safety and hygiene norms.
    • Ability to work efficiently under pressure in a team-oriented and fast-paced environment.
    • Excellent communication skills and a proactive attitude towards learning and growth.
  • Working Conditions:
    • Must be physically fit to handle prolonged standing, repetitive tasks, and the demands of a busy, high-temperature kitchen.
    • Flexibility to work in shifts, including evenings, weekends, and public holidays as required.
