La Brioche Café et Pâtisserie is hiring Kitchen / Pastry / Bakery — Commis for its Dubai opening (also considering candidates for Abu Dhabi, Sharjah, and Al Ain). This entry‑to‑mid level role is designed for motivated cooks or pastry assistants who want hands‑on experience in a busy café‑patisserie environment. You will support Chef de Partie and Demi Chef de Partie colleagues across production and a la carte service, learn standardized recipes and portion control, and help maintain station discipline and hygiene. The role suits candidates with up to 1 year of relevant experience or vocational training, a strong work ethic, and a willingness to learn and progress within the brand.


Duties and Responsibilities

  • Production and Prep
    • Prepare vegetables, proteins, doughs, batters, creams, custards, fillings, and basic pastry components to recipe specifications.
    • Weigh, portion, label, and store prepared items; follow FIFO and temperature control procedures.
  • Service Support
    • Assist CDP/DCDP during service with plating, finishing, and timely delivery of dishes and desserts.
    • Maintain correct portion control and check quality before service.
  • Routine Kitchen Tasks
    • Prepare stocks, basic sauces, glazes, and simple garnishes under supervision.
    • Monitor bake times and temperatures; follow baking and cooling procedures.
  • Station Maintenance and Cleanliness
    • Keep the workstation organised and service‑ready; follow daily cleaning schedules and equipment checklists.
    • Maintain tools and small equipment hygiene; report faults promptly.
  • Food Safety and Compliance
    • Adhere to HACCP and local food safety procedures; enforce allergen controls and prevent cross‑contamination.
    • Conduct temperature checks and ensure correct labelling and storage.
  • Teamwork and Learning
    • Take direction from senior chefs, participate in briefings, and apply feedback to improve.
    • Support colleagues during peak periods and assist with basic stock counts and deliveries.

Requirements

  • Experience: Entry level to 1 year kitchen, pastry, or bakery experience preferred; culinary or pastry diploma advantageous.
  • Technical Skills: Basic knife skills, portioning, weighing, and familiarity with common kitchen/pastry tasks; eagerness to learn laminations, tempering, and plated dessert finishing.
  • Food Safety: HACCP or food hygiene awareness preferred; strict adherence to hygiene and allergen procedures.
  • Personal Attributes: Reliable, punctual, physically fit, calm under pressure, detail‑oriented, and coachable.
  • Operational: Comfortable with flexible shifts including early mornings, evenings, weekends, and public holidays; eligible to work in the UAE.
  • Language: Fluent English preferred; additional languages are an advantage.
