As Assistant Restaurant Manager at Nemo by Swot Hospitality, you will be the operational right hand to the Restaurant Manager in a high‑profile, design‑led dining destination set against a panoramic underwater aquarium. You will help shape the guest journey from reservation to farewell, coach and develop front‑of‑house teams, and ensure service standards are consistently exceptional. This role requires a hands‑on leader who blends commercial focus with genuine hospitality: someone who can manage daily operations, support revenue initiatives, and step into the guest‑facing spotlight when needed. You will collaborate closely with culinary, bar, and corporate teams to deliver seamless service, drive performance, and foster a culture of continuous improvement.


Duties and Responsibilities

  • Operational Support — Assist in running daily restaurant operations, manage shift handovers, and ensure service flow and presentation meet Nemo standards.
  • Guest Experience — Actively engage with guests, manage VIPs and special requests, and lead guest recovery with professionalism and discretion.
  • Team Leadership — Supervise, train, and mentor captains, waitstaff, hostesses, and bar attendants; support scheduling and performance reviews.
  • Service Standards — Enforce service protocols, grooming standards, and hygiene practices across all front‑of‑house areas.
  • Revenue Support — Drive upselling, support promotional activity, and assist with private dining and event execution to maximize covers and average spend.
  • Inventory and Cost Control — Support stock management, monitor par levels, and assist with waste reduction and cost control measures.
  • Coordination with Kitchen and Bar — Liaise with culinary and bar teams to coordinate timing, menu rollouts, and special events.
  • Reporting and Administration — Prepare shift reports, update reservation systems, and assist with daily financial reconciliations and incident logs.
  • Training and Development — Deliver on‑shift coaching, run service drills, and help implement training programs and SOPs.

Requirements

  • Experience — Minimum 2–4 years in front‑of‑house supervisory roles within upscale or fine dining environments.
  • Skills — Strong leadership, clear communication, conflict resolution, and polished table service technique.
  • Technical — Comfortable with POS systems, reservation platforms, and basic reporting.
  • Qualifications — Hospitality diploma or equivalent preferred; food safety and responsible alcohol service certifications advantageous.
  • Personal Attributes — Calm under pressure, detail oriented, guest‑centric, and a collaborative team player.
  • Availability — Flexible to work evenings, weekends, and public holidays.
  • Language — Fluent English; additional languages are a plus.
