As Head Waiter at Nemo by Swot Hospitality, you will be the on‑floor ambassador of service excellence in a signature dining destination set against a panoramic underwater aquarium. You will lead the service team during shifts, translate the restaurant’s refined standards into flawless guest moments, and act as the primary liaison between front‑of‑house and kitchen teams. This role demands a poised, experienced service professional who combines polished table technique with strong leadership, clear communication, and a genuine hospitality instinct. You will mentor junior staff, manage complex covers and private bookings, and help shape the guest journey so every visit to Nemo feels curated, effortless, and memorable.


Duties and Responsibilities

  • Shift Leadership — Supervise service during assigned shifts; open and close sections; ensure timing and flow between courses.
  • Service Excellence — Deliver and uphold high standards of table service, presentation, and guest interaction.
  • Team Coaching — Train and mentor waitstaff and junior team members; run on‑shift coaching and service drills.
  • Guest Relations — Welcome VIPs, manage special requests, and resolve guest issues with discretion and empathy.
  • Coordination — Liaise with the kitchen and bar to synchronize course timing, special menus, and large bookings.
  • Reservations Support — Assist with seating plans, table allocations, and optimizing covers during peak periods.
  • Quality Control — Monitor side stations, mise en place, and service equipment; ensure cleanliness and readiness.
  • Reporting — Complete shift handovers, report guest feedback, and log incidents or operational notes.

Requirements

  • Experience — Minimum 2–4 years in fine dining or upscale hospitality with prior supervisory or senior waiter experience.
  • Skills — Exceptional table service technique, confident upselling, strong communication, and leadership ability.
  • Knowledge — Solid menu and beverage knowledge with the ability to recommend pairings and explain dishes.
  • Technical — Comfortable using POS and reservation systems.
  • Qualifications — Food safety certification preferred; responsible alcohol service certification advantageous.
  • Personal Attributes — Calm under pressure, detail oriented, professional presentation, and a collaborative team player.
  • Availability — Flexible to work evenings, weekends, and public holidays.
  • Language — Fluent English; additional languages are an advantage.
