Head Waiter — Ammos Greek Restaurant Dubai
Ammos is seeking an experienced, polished, and guest‑focused Head Waiter to lead our front‑of‑house team and elevate the dining experience at our Greek island–inspired restaurant in Dubai. This role is ideal for a service professional who combines refined table management with warm, authentic hospitality and a deep knowledge of food and beverage pairing. You will be the face of the restaurant during service, responsible for supervising servers, ensuring smooth floor operations, and delivering consistently high standards of service from greeting to farewell. The successful candidate is confident in fine dining service techniques, excels at coaching and motivating staff, and takes pride in anticipating guest needs while maintaining calm and control during busy services. This position offers the chance to shape guest journeys, contribute to service training, and grow within the Sunset Hospitality family.


Duties and Responsibilities

  • Service Leadership: Lead the service team during shifts; assign sections; oversee mise en place and pre‑service briefings.
  • Guest Experience: Greet VIPs and regulars, manage special requests, and ensure personalized, attentive service throughout the meal.
  • Table Management: Coordinate timing between courses, manage table turns, and ensure accurate order flow with the kitchen and bar.
  • Training and Coaching: Mentor servers on upselling, menu knowledge, wine and cocktail pairings, and professional service standards.
  • Quality Control: Monitor presentation, portioning, and service consistency; conduct regular floor checks and guest satisfaction follow‑ups.
  • Operational Tasks: Supervise side work, oversee POS accuracy and billing, assist with reservations and waitlist management.
  • Event Support: Lead service for private dining, group bookings, and special events; liaise with events coordinator on execution.
  • Problem Resolution: Handle guest complaints with tact and speed, escalating to management when necessary.

Requirements

  • Experience: Minimum 3 years in a senior server or head waiter role in upscale, high‑volume, or Mediterranean/seafood restaurants.
  • Service Skills: Strong knowledge of fine dining service, wine and beverage pairing, and suggestive selling techniques.
  • Leadership: Proven ability to lead, train, and motivate a front‑of‑house team; excellent coaching and communication skills.
  • Technical: Comfortable with reservation systems and POS platforms; accurate cash and billing handling.
  • Languages: Fluent English required; additional languages (Greek, Arabic, Russian) are an advantage.
  • Personal Attributes: Professional presentation, calm under pressure, detail‑oriented, guest‑centric, and reliable.
  • Availability: Flexible to work evenings, weekends, and public holidays; willingness to support occasional off‑site events.

Salary Scale

  • Monthly Salary Range: AED 6,000 – AED 9,000 depending on experience and leadership capability.
  • Additional Compensation: Eligibility for service tips and performance‑based incentives.
  • Contract Notes: Final package confirmed at offer stage and may include transport or accommodation allowance where applicable.
