As Bar Manager at Nemo by Swot Hospitality, you will lead a signature beverage program in a high‑profile dining destination framed by a panoramic underwater aquarium. You will design and execute a beverage strategy that complements our Eurasian menu and raw bar, elevates guest moments, and drives commercial performance. This role blends creative mixology, operational discipline, and people leadership: you will curate menus, train and inspire bartenders, manage inventory and supplier relationships, and ensure every guest encounter at the bar and lounge is polished and memorable. You will collaborate closely with culinary and front‑of‑house leadership to deliver seamless service across all outlets.


Duties and Responsibilities

  • Beverage Program Development — Create and refresh cocktail menus, signature serves, and seasonal beverage offerings that align with Nemo’s concept.
  • Operational Management — Oversee daily bar operations, opening and closing procedures, stock control, and equipment maintenance.
  • Team Leadership — Recruit, train, schedule, and mentor bartenders and bar attendants; run regular tastings, service drills, and performance reviews.
  • Guest Experience — Ensure consistent, high‑touch service at the bar and lounge; handle VIPs, special requests, and guest recovery with professionalism.
  • Commercial Performance — Drive revenue through upselling, promotions, private events, and beverage pairings; monitor sales and implement strategies to meet targets.
  • Inventory and Cost Control — Manage purchasing, par levels, waste reduction, and supplier negotiations to optimize margins.
  • Compliance and Safety — Maintain licensing, responsible alcohol service, and health and safety standards.
  • Collaboration — Work with the Executive Chef and Restaurant Manager on menu pairings, event planning, and cross‑training initiatives.
  • Reporting — Prepare daily sales reports, stock reconciliations, and supplier performance reviews.

Requirements

  • Experience — Minimum 3–5 years managing beverage operations in upscale restaurants, hotel bars, or high‑volume venues.
  • Skills — Strong mixology knowledge, menu development experience, leadership and coaching ability, and excellent guest communication.
  • Technical — Familiarity with POS systems, inventory management tools, and basic financial reporting.
  • Qualifications — Bartending certification and responsible service of alcohol credentials preferred.
  • Personal Attributes — Creative, commercially minded, calm under pressure, detail oriented, and a collaborative leader.
  • Availability — Flexible to work evenings, weekends, and public holidays.
  • Language — Fluent English; additional languages are an advantage.
