Join MONTAUK Restaurant as a Line Cook at Downtown Boulevard, Dubai and help build a refined Emirati‑fusion kitchen from the ground up. We are looking for a reliable, skilled cook who thrives in a high‑tempo, quality‑driven environment and who takes pride in consistent execution, clean technique, and teamwork. As a core member of our launch brigade you will work across hot line stations, support mise en place, and collaborate with the Head Chef to deliver plated dishes that reflect Montauk’s seasonal, ingredient‑led menu. This role offers structured onboarding, clear performance expectations, and opportunities for progression as the restaurant grows. Duties and Responsibilities

  • Execute menu items accurately and consistently across assigned station(s) during service.
  • Follow standardized recipes and plating specifications to maintain quality and portion control.
  • Maintain mise en place: prepare ingredients, portion proteins, and ensure stations are service‑ready.
  • Support inventory and receiving: check deliveries, rotate stock, and label items according to FIFO.
  • Clean and sanitise work areas, equipment, and tools; uphold kitchen hygiene and HACCP standards.
  • Assist with prep lists and daily production tasks to meet service demands.
  • Communicate clearly with the Head Chef, sous, and FOH to coordinate timing and special requests.
  • Adapt to menu changes and assist with daily specials, plating trials, and recipe testing when required.
  • Work efficiently under pressure while maintaining composure and teamwork during peak covers.

Requirements

  • Experience: Minimum 2 years in a professional kitchen, preferably in upscale restaurants or hotels.
  • Skills: Strong hot‑line skills (grill, sauté, fry, or similar); solid knife skills and portion control.
  • Food safety: Knowledge of HACCP principles; food safety certification preferred.
  • Work style: Fast, organised, detail‑oriented, and able to follow direction from senior kitchen staff.
  • Physical: Able to stand for long periods, lift up to 25 kg, and work in a hot, fast environment.
  • Availability: Flexible to work evenings, weekends, and public holidays; willing to attend training and trial shifts.
  • Eligibility: Legal right to work in the UAE.
  • Desirable: Experience with Emirati or fusion cuisine, basic knowledge of allergen handling, and references from previous chefs.
