Position Summary

IHG Indigo, a trailblazer in luxury and lifestyle hospitality, invites culinary professionals with a flair for butchery and commissary operations to join our dynamic team. We are seeking a Junior Sous Chef – Butchery & Commissary who will support our high-quality dining experience through expert food preparation and hands-on kitchen execution. An added advantage will be proficiency in hot kitchen cooking. Candidates who can join immediately are highly preferred.

Duties and Responsibilities

Butchery & Commissary Operations:
- Assist in the preparation, portioning, and management of meat products and other ingredients.
- Adhere to food safety, hygiene, and quality control protocols in all processes.
Hot Kitchen Expertise:
- Support the execution of specialty dishes that require advanced cooking techniques, complementing the general commissary work.
- Collaborate with the hot kitchen team to ensure that every plate meets our high-quality standards.
Inventory and Quality Management:
- Monitor food inventory levels, manage stock order and storage, and ensure the freshness and quality of all products.
- Implement strict adherence to portion control and proper storage practices.
Team Collaboration & Communication:
- Work closely with the head chef and culinary team to maintain a seamless operation across all kitchen stations.
- Assist in mentoring junior kitchen staff and ensure they follow standardized procedures and safety practices.

Candidate Requirements

Demonstrated experience in butchery, commissary, or a related culinary function.
Proven competence in hot kitchen cooking – a definite advantage.
Comprehensive knowledge of food safety, sanitation, and hygiene standards.
Strong organizational, communication, and teamwork skills.
Ability to work efficiently in a dynamic, fast-paced environment.
Immediate availability required.
