Junior Sous Chef - Butchery & Commissary

Position Summary

IHG Indigo, a trailblazer in luxury and lifestyle hospitality, invites culinary professionals with a flair for butchery and commissary operations to join our dynamic team. We are seeking a Junior Sous Chef – Butchery & Commissary who will support our high-quality dining experience through expert food preparation and hands-on kitchen execution. An added advantage will be proficiency in hot kitchen cooking. Candidates who can join immediately are highly preferred.


Duties and Responsibilities

  • Butchery & Commissary Operations:
    • Assist in the preparation, portioning, and management of meat products and other ingredients.
    • Adhere to food safety, hygiene, and quality control protocols in all processes.
  • Hot Kitchen Expertise:
    • Support the execution of specialty dishes that require advanced cooking techniques, complementing the general commissary work.
    • Collaborate with the hot kitchen team to ensure that every plate meets our high-quality standards.
  • Inventory and Quality Management:
    • Monitor food inventory levels, manage stock order and storage, and ensure the freshness and quality of all products.
    • Implement strict adherence to portion control and proper storage practices.
  • Team Collaboration & Communication:
    • Work closely with the head chef and culinary team to maintain a seamless operation across all kitchen stations.
    • Assist in mentoring junior kitchen staff and ensure they follow standardized procedures and safety practices.

Candidate Requirements

  • Demonstrated experience in butchery, commissary, or a related culinary function.
  • Proven competence in hot kitchen cooking – a definite advantage.
  • Comprehensive knowledge of food safety, sanitation, and hygiene standards.
  • Strong organizational, communication, and teamwork skills.
  • Ability to work efficiently in a dynamic, fast-paced environment.
  • Immediate availability required.
