Introduction / Summary

Roasters Specialty Coffee House is opening a new branch and we’re seeking an experienced, hands-on Restaurant Manager to lead the pre-opening and daily operations. This role suits a commercially minded hospitality professional who combines servant leadership with operational discipline and a genuine passion for specialty coffee and guest experience. You will own the branch’s performance, lead and develop the opening team, implement Roasters’ service standards and SOPs, and shape a positive culture where quality, consistency, and guest connections thrive. The ideal candidate is comfortable with numbers and people in equal measure — capable of delivering sales growth, controlling costs, coaching staff, and ensuring flawless execution from morning prep to last service. This is a full-time, frontline leadership position that requires flexibility for early starts, weekends and public holidays, and a readiness to be deeply involved in recruitment, training, and vendor coordination during the pre-opening phase.


Duties and Responsibilities

  • Lead the branch pre-opening: recruit and onboard the opening team; set SOPs, layouts, and service flows.
  • Oversee daily operations across front-of-house functions to ensure consistent guest experience and product quality.
  • Drive sales and profitability through menu merchandising, upselling initiatives, promotions, and local community engagement.
  • Manage rostering, labour costs, and scheduling to align with budget targets and service demand.
  • Own inventory control, stock ordering cycles, cost monitoring, and liaising with suppliers and service technicians.
  • Monitor and report on financial metrics (sales, margins, wastage); implement corrective actions where needed.
  • Coach and develop staff with regular briefings, one-to-ones, and performance reviews; lead by example on floor.
  • Maintain compliance with health, safety and hygiene standards; ensure equipment maintenance and calibration.
  • Resolve guest feedback and escalations professionally and promptly; represent Roasters in the local community.

Requirements

  • 3–5+ years’ management experience in F&B, café or fast-casual environments; pre-opening experience strongly preferred.
  • Demonstrable commercial acumen: P&L understanding, cost control, forecasting and labour optimisation.
  • Strong leadership and people-development track record; experience recruiting and building high-performing teams.
  • Deep commitment to service standards, product consistency and operational discipline.
  • Excellent communication, organisation and problem-solving skills; calm under pressure.
  • Familiarity with POS systems, basic stock systems and kitchen/coffee workflows.
  • Flexibility to work varied shifts, including early mornings, weekends and public holidays.
