Chef de Cuisine — Ammos Greek Restaurant Dubai
Ammos is seeking a dynamic, experienced Chef de Cuisine to lead our kitchen and shape the culinary identity of our Greek island–inspired restaurant in Dubai. This role calls for a culinary leader who blends deep respect for Mediterranean tradition with contemporary technique, creative menu development, and hands‑on brigade management. You will be responsible for translating family recipes and coastal flavors into consistent, elevated dishes that delight guests across lunch, dinner, and special events. The ideal candidate thrives under pressure, values seasonal and sustainable sourcing, mentors a diverse team, and works closely with front‑of‑house to ensure seamless service and memorable dining experiences. Duties and Responsibilities
- Menu Development: Create and refine seasonal à la carte menus, daily specials, and tasting menus that reflect authentic Greek and Mediterranean flavors.
- Kitchen Leadership: Lead, train, schedule, and motivate the kitchen team; set standards for performance, presentation, and timing.
- Quality Control: Maintain consistency in taste, portioning, plating, and service speed across all outlets and service periods.
- Cost and Inventory Management: Manage purchasing, supplier relationships, stock rotation, and food cost targets; implement portion control and waste reduction measures.
- Health and Safety: Enforce HACCP and local food safety regulations; ensure kitchen cleanliness and safe working practices.
- Operational Collaboration: Coordinate with FOH management on menu rollouts, special events, and guest feedback; participate in pre‑service briefings.
- Talent Development: Recruit, run trials, and develop career pathways for cooks and apprentices; lead regular training and tasting sessions.
- Events and Outreach: Support off‑site catering, pop‑ups, and culinary research trips as required.
Requirements
- Experience: Minimum 5 years in senior kitchen roles with at least 2 years leading a brigade in an upscale or high‑volume Mediterranean, Greek, or seafood‑focused concept.
- Culinary Skills: Strong foundation in Mediterranean techniques, wood‑grill cooking, seafood handling, and modern plating.
- Leadership: Proven ability to recruit, mentor, and retain kitchen staff; excellent communication and conflict resolution skills.
- Commercial Acumen: Demonstrated experience managing food cost, supplier negotiation, and menu engineering.
- Qualifications: Culinary diploma or equivalent preferred; valid food safety certification required.
- Personal Attributes: Creative, organized, resilient under pressure, guest‑centric, and committed to sustainability.
- Availability: Flexible to work evenings, weekends, and peak periods; willingness to participate in occasional off‑site events and research trips.
Salary Scale
- Monthly Salary Range: AED 25,000 – AED 40,000 depending on experience, proven track record, and leadership capability.
- Performance Bonus: Eligibility for performance‑based bonuses tied to kitchen KPIs and guest satisfaction metrics.
- Contract Terms: Salary package will be confirmed during offer stage and may include accommodation allowance where applicable.
