Duties and Responsibilities

Front of House (FOH)

Floor Manager

  • Oversee the entire floor during service, ensuring smooth operations and high service standards
  • Lead, coach and motivate FOH teams including hosts, waiters, runners and bar staff
  • Handle guest feedback, VIP requests and escalations professionally
  • Manage staff rosters, briefings and performance on shift
  • Ensure compliance with health, safety, licensing and company policies

Head Waiter

  • Supervise the waiting team and allocate sections and responsibilities
  • Deliver exceptional table service and set the standard for the team
  • Ensure strong food, beverage and menu knowledge across the team
  • Assist with guest complaints and ensure timely resolution
  • Support training of new waiters and monitor service quality

Waiter

  • Welcome guests, take orders and serve food and beverages accurately
  • Offer menu recommendations and upsell where appropriate
  • Maintain table setups, cleanliness and station readiness
  • Coordinate with the kitchen, bar and runners for timely service
  • Handle payments and ensure a memorable guest experience

Head Hostess

  • Manage the guest entrance, seating plan and waiting list
  • Supervise the hostess team and ensure a warm, polished welcome
  • Coordinate with reservations and the floor team to optimise table turnover
  • Handle VIP arrivals, special requests and guest queries
  • Maintain grooming, presentation and service standards for the host team

Hostess

  • Greet and seat guests in a friendly, professional manner
  • Manage reservations, walk-ins and guest flow
  • Provide information about the venue, menus and events
  • Communicate seating status to the floor team
  • Handle guest enquiries with courtesy and professionalism

Reservation Agent

  • Receive and process reservations via phone, email and online channels
  • Manage the booking system and keep availability accurate
  • Confirm bookings and communicate special requests to the team
  • Handle group, event and VIP table enquiries
  • Maintain strong product knowledge on venue offerings and events

Head Bartender

  • Lead the bar team and oversee daily bar operations
  • Create and maintain cocktail menus, recipes and presentation standards
  • Control stock, ordering, wastage and bar costs
  • Train and mentor bartenders and barbacks
  • Ensure responsible service of alcohol and compliance with regulations

Bartender

  • Prepare and serve cocktails, spirits, wine and beverages to company standards
  • Maintain a clean, organised and well-stocked bar
  • Engage guests and recommend drinks with confidence
  • Follow recipes, portion control and responsible service guidelines
  • Handle cash and card transactions accurately

Barback

  • Support bartenders by restocking ice, spirits, garnishes and glassware
  • Keep the bar area clean, tidy and ready for service
  • Prepare garnishes and bar mise-en-place
  • Assist with deliveries and stock rotation
  • Work quickly and safely during busy nightlife service

Junior Sommelier

  • Assist the sommelier team with wine and beverage service
  • Recommend wine pairings and guide guests through the wine list
  • Maintain cellar organisation, stock rotation and wine inventory
  • Present and serve wine according to professional standards
  • Support staff training on wine and beverage knowledge

Runner

  • Deliver food and beverages from the kitchen and bar to guest tables promptly
  • Ensure correct table numbers and seat positions
  • Support waiters with clearing, resetting and table maintenance
  • Keep service stations clean and stocked
  • Communicate clearly with the kitchen and floor teams

Cashier

  • Process payments accurately by cash, card and other methods
  • Reconcile transactions and prepare end-of-shift reports
  • Handle bills, voids, discounts and guest billing queries
  • Safeguard cash and follow financial control procedures
  • Provide friendly, efficient service at the point of sale

Back of House (BOH)

Executive Chef

  • Lead all kitchen operations, menu development and culinary standards
  • Manage food cost, budgets, purchasing and supplier relationships
  • Recruit, train and develop the culinary team
  • Ensure strict compliance with food safety and hygiene regulations
  • Collaborate with management on concepts, events and seasonal menus

Sous Chef

  • Support the Executive Chef in daily kitchen management
  • Supervise stations during service and ensure consistent quality
  • Manage ordering, stock control and kitchen rosters
  • Train and coach chefs de partie and commis
  • Enforce HACCP, hygiene and safety standards

Chef de Partie

  • Run an assigned kitchen section efficiently during service
  • Prepare dishes to recipe, quality and presentation standards
  • Manage mise-en-place, stock levels and wastage for the section
  • Supervise and guide commis chefs
  • Maintain cleanliness and food safety compliance

Commis 1

  • Assist chefs de partie with preparation and cooking
  • Prepare ingredients, sauces and mise-en-place to specification
  • Support service with consistent speed and quality
  • Follow hygiene, labelling and storage standards
  • Help train and guide Commis 2 team members

Commis 2

  • Support the kitchen team with basic food preparation
  • Wash, chop and prepare ingredients as instructed
  • Keep the workstation clean, organised and safe
  • Learn recipes, techniques and kitchen procedures
  • Follow all food safety and hygiene guidelines

Steward

  • Wash and sanitise dishes, glassware, cutlery and kitchen equipment
  • Keep kitchen, dishwashing and storage areas clean
  • Handle waste disposal and recycling procedures
  • Assist with stock movement and basic kitchen support
  • Follow chemical handling and safety guidelines

Receiver

  • Receive, inspect and verify deliveries against purchase orders
  • Check quality, quantity, temperature and expiry dates
  • Store goods correctly and maintain the FIFO system
  • Maintain accurate receiving records and report discrepancies
  • Keep receiving and storage areas clean and organised

Maintenance Supervisor

  • Oversee preventive and corrective maintenance across venue facilities
  • Supervise technicians and coordinate with contractors
  • Maintain kitchen, HVAC, electrical, plumbing and bar equipment
  • Respond quickly to breakdowns, especially during peak operating hours
  • Ensure compliance with health, safety and municipality regulations

Requirements

Front of House (FOH)

Floor Manager

  • Proven experience as a Floor Manager or Assistant Manager in a high-volume restaurant, lounge or nightlife venue
  • Strong leadership, communication and problem-solving skills
  • Knowledge of UAE hospitality regulations and responsible alcohol service
  • Ability to work late nights, weekends and holidays
  • Fluent English; additional languages are an advantage

Head Waiter

  • Previous experience as Head Waiter or Senior Waiter in a premium venue
  • Strong food and beverage knowledge and leadership ability
  • Excellent guest-handling and communication skills
  • Ability to train and motivate a team
  • Flexibility to work nightlife hours

Waiter

  • Previous waiting experience in a restaurant, lounge or club preferred
  • Good communication skills and a positive attitude

Head Hostess

  • Experience as a Head Hostess or Senior Hostess in a premium venue
  • Polished presentation and strong interpersonal skills

Hostess

  • Prior hostess or guest-facing experience preferred

Head Bartender

  • Proven experience as a Head Bartender or Senior Bartender in a high-volume venue
  • Extensive knowledge of cocktails, spirits and mixology techniques

  • Responsible service of alcohol knowledge

Bartender

  • Previous bartending experience in a bar, lounge or nightclub
  • Knowledge of classic and modern cocktails

Barback

  • Previous bar support experience is an advantage but not essential
  • Physically fit and able to lift stock and stand for long periods

Junior Sommelier

  • Experience or training in wine service; WSET Level 2 or equivalent preferred

Runner

  • Entry-level hospitality experience is welcome

Sous Chef

Chef de Partie
