Saddle House is hiring experienced Sous Chefs for both Dubai and Sharjah locations. We’re looking for hands‑on culinary leaders who can run daily kitchen operations, support the Head Chef, and ensure consistent food quality across high‑volume service periods. The ideal candidates combine strong technical skills in hot and cold sections, effective team management, and a disciplined approach to cost control and food safety. In this role you will supervise prep and production, coach CDPs and commis, manage mise en place, and step into service to maintain timing and presentation standards. You will also collaborate with FOH leadership on covers, VIPs, and special events, and contribute to menu execution and continuous improvement initiatives. Duties and Responsibilities

Core Responsibilities for Both Locations

  • Kitchen Operations: Oversee daily production, manage prep schedules, and ensure stations are ready for service.
  • Service Support: Coordinate with Head Chef and FOH to manage timing, plating, and special requests during service.
  • Team Supervision: Supervise CDPs, DCDPs, and commis; run briefings, on‑shift coaching, and performance feedback.
  • Quality Control: Maintain recipe consistency, portion control, and plating standards; run regular tastings and calibrations.
  • Hygiene and Safety: Enforce HACCP and local food safety standards; conduct temperature checks and cleanliness audits.
  • Inventory and Cost Control: Monitor stock usage, minimize waste, and support purchasing decisions with the Store Keeper.
  • Training and Development: Deliver practical training, document standard operating procedures, and support career progression for junior staff.

Dubai Location Notes

  • Pace and Volume: Expect higher covers and faster service tempo; strong experience in busy, multi‑outlet or hotel kitchens is advantageous.
  • Menu Complexity: Greater emphasis on diverse menu offerings and seasonal specials; experience with international cuisine and modern plating is preferred.
  • Supplier Network: Familiarity with premium suppliers and ability to manage multiple vendor relationships is a plus.

Sharjah Location Notes

  • Local Focus: Emphasis on consistent execution and strong local guest relations; experience adapting menus to local preferences is valuable.
  • Team Development: Opportunity to build and mentor a growing brigade; strong coaching skills will be highly regarded.
  • Operational Stability: Focus on operational discipline, waste reduction, and reliable service delivery.

Requirements

  • Experience: Minimum 3–5 years in supervisory kitchen roles; prior Sous Chef experience preferred.
  • Culinary Skills: Strong technical ability across hot and cold sections; familiarity with pastry collaboration and modern plating.
  • Leadership: Proven ability to lead, train, and retain kitchen staff; effective rostering and conflict resolution.
  • Food Safety: HACCP or equivalent food safety certification preferred; thorough knowledge of local regulations.
  • Commercial Acumen: Experience with food cost control, portioning, and inventory management.
  • Personal Attributes: Resilient under pressure, detail‑oriented, excellent communicator, and a collaborative team player.
  • Eligibility: Local resident eligible to work in the UAE; flexible availability including weekends and public holidays.
