Saddle House is recruiting a hands‑on Demi Chef de Partie Pastry for our Dubai and Sharjah kitchens. This mid‑level pastry role is ideal for a technically capable cook who can support the pastry CDP, run production tasks independently, and step into service to finish plated desserts and baked goods to a high standard. You will work across routine production and a la carte service, preparing doughs, creams, custards, glazes, and garnishes while maintaining strict portion control and consistency. The role requires a strong foundation in pastry techniques, an eye for presentation, and the discipline to follow standardized recipes and hygiene protocols. You will mentor commis pastry staff, assist with inventory rotation and waste control, and contribute ideas for seasonal desserts and specials. Candidates with 1–3 years pastry experience who are eager to develop their skills and take on more responsibility are encouraged to apply. Local candidates eligible to work in the UAE are preferred. Duties and Responsibilities
- Production and Preparation
- Prepare doughs, batters, creams, custards, sauces, glazes, and fillings according to recipes and production schedules.
- Portion, weigh, and label prepared items; ensure correct storage and rotation.
- Plating and Service Support
- Finish and plate desserts to standardized presentation during service; ensure temperature and texture consistency.
- Assist the pastry CDP during peak service and cover the station when required.
- Technical Tasks
- Execute technical pastry work such as laminations, tempering chocolate, mousse assembly, and basic sugar work as needed.
- Monitor bake times and temperatures; adjust processes under guidance to maintain quality.
- Station Management
- Maintain mise en place, organize workstation, and ensure all tools and equipment are clean and service‑ready.
- Follow cleaning schedules and daily checklists for pastry equipment.
- Training and Teamwork
- Support and coach commis pastry staff with on‑the‑job training and demonstrations.
- Participate in briefings, handovers, and tastings; implement feedback to improve consistency.
- Hygiene and Safety
- Adhere to HACCP and local food safety procedures; enforce allergen controls and prevent cross‑contamination.
- Conduct temperature checks and ensure correct labeling and storage of ingredients.
- Inventory and Cost Control
- Assist with stock counts, portion control, and waste reduction initiatives; report shortages or quality issues.
- Help implement cost‑effective production methods while maintaining product standards.
- Menu Support
- Contribute ideas for seasonal desserts and specials; assist with recipe testing and documentation.
- Help standardize new items for consistent execution across shifts.
Requirements
- Experience: 1–3 years pastry experience in restaurants, hotels, or specialty patisseries; prior commis or junior pastry role preferred.
- Technical Skills: Competence in pastry fundamentals—doughs, creams, custards, laminations, chocolate work, and plated desserts.
- Food Safety: HACCP or equivalent food safety awareness preferred; strict adherence to hygiene and allergen procedures.
- Operational Skills: Familiarity with portion control, basic inventory rotation, and working to cost targets.
- Personal Attributes: Detail‑oriented, reliable, calm under pressure, creative, and committed to consistent quality.
- Team Skills: Good communicator, coachable, and able to follow direction from pastry leads.
- Eligibility: Local resident eligible to work in the UAE; flexible availability including weekends and public holidays.
