Saddle House Sharjah and Dubai are hiring a Commis Pastry — an entry‑to‑mid level pastry role for candidates who want to build technical skills and grow within a professional pastry brigade. This position suits cooks with a solid foundation in basic pastry techniques who are eager to learn laminations, creams, custards, and plated dessert finishing under the guidance of the pastry CDP and DCDP. You will split time between routine production and a la carte service: preparing mise en place, portioning and labeling, executing simple bakes, and finishing plated desserts to standard. The role demands discipline, attention to detail, and consistent hygiene practices; it also rewards initiative, creativity, and a willingness to take on responsibility. Local candidates eligible to work in the UAE are preferred. Duties and Responsibilities

  • Production and Prep
    • Prepare doughs, batters, creams, custards, sauces, and fillings to recipe specifications.
    • Weigh, portion, label, and store prepared items; maintain accurate rotation and FIFO practices.
  • Plating and Service Support
    • Finish and plate desserts during service following standardized presentation guides.
    • Ensure temperature, texture, and portion consistency before service.
  • Routine Technical Tasks
    • Perform basic laminations, temper chocolate, assemble mousses, and execute simple sugar or glaze work as required.
    • Monitor bake times and temperatures; adjust under supervision to maintain quality.
  • Station Maintenance
    • Keep the pastry station organized and service‑ready; follow cleaning schedules and equipment checklists.
    • Maintain tools and small equipment hygiene; report faults promptly.
  • Hygiene and Safety
    • Adhere strictly to HACCP and local food safety procedures; enforce allergen controls and prevent cross‑contamination.
    • Conduct temperature checks and ensure correct labeling and storage of ingredients.
  • Teamwork and Learning
    • Support and learn from pastry CDP and DCDP; assist in training commis pastry staff.
    • Participate in briefings, tastings, and calibration sessions; implement feedback to improve consistency.

Requirements

  • Experience: 1–3 years pastry or bakery experience preferred; culinary or pastry diploma advantageous.
  • Technical Skills: Basic competence in doughs, creams, custards, portioning, and plated dessert finishing.
  • Food Safety: HACCP or equivalent awareness preferred; strict adherence to hygiene and allergen procedures.
  • Operational Skills: Familiarity with portion control, stock rotation, and basic inventory practices.
  • Personal Attributes: Detail‑oriented, reliable, punctual, physically fit, calm under pressure, and coachable.
  • Eligibility: Local resident eligible to work in the UAE; flexible availability including weekends and public holidays.
