SUSHISAMBA Dubai is looking for a skilled and dependable Chef de Partie – Sushi to take ownership of the sushi station and deliver consistently excellent dishes that reflect our Japanese‑Brazilian‑Peruvian fusion identity. This is a hands‑on role for a technically proficient cook who can run a station independently during service, maintain high standards of mise en place, and mentor junior cooks. You will be responsible for executing menu items with precision, managing portion control and presentation, and ensuring the sushi pass operates smoothly under pressure. The ideal candidate combines refined knife skills, deep respect for ingredient quality, and a calm, organized approach to busy service periods while contributing ideas to menu refinement and station efficiency.
Duties and Responsibilities
- Station Management: Run the sushi station during service; prepare, plate and finish sushi and sashimi to recipe and presentation standards.
- Prep and Mise en Place: Complete daily prep tasks including rice preparation, fish portioning, garnishes, sauces and condiments; ensure consistent portion sizes.
- Quality Control: Inspect incoming fish and ingredients for freshness; maintain correct storage, rotation and labeling practices.
- Training and Supervision: Coach and support junior sushi cooks; delegate tasks and ensure adherence to station procedures.
- Hygiene and Safety: Maintain strict compliance with HACCP and food‑safety standards; keep the station and equipment clean and sanitized.
- Inventory Support: Monitor stock levels for the sushi station, report shortages, and assist with receiving and storing deliveries.
- Collaboration: Coordinate with sous chefs and service staff to manage ticket times, special requests and dietary requirements.
- Continuous Improvement: Contribute to recipe testing, plating ideas and efficiency improvements for the sushi pass.
Requirements
- Experience: Minimum 2–4 years working on a sushi station or in a Japanese kitchen; experience in upscale or high‑volume restaurants preferred.
- Technical Skills: Excellent knife skills, fish handling and butchery knowledge, rice preparation expertise and strong sushi plating technique.
- Qualifications: Culinary diploma or relevant certification advantageous; food‑safety certification required or willingness to obtain.
- Attributes: Meticulous attention to detail, ability to work quickly under pressure, strong teamwork and clear communication.
- Availability: Flexible to work evenings, weekends and public holidays; reliable punctuality and commitment to scheduled shifts.
- Legal: Right to work in the UAE or a valid work permit.
