Chef de Partie Sushi — Kapitol Dubai by Sunset Hospitality

Kapitol Dubai is seeking an experienced, disciplined, and creative Chef de Partie (Sushi) to join our pre‑opening culinary team. This is a hands‑on leadership role within Sunset Hospitality’s newest social gaming and lifestyle destination, offering the chance to shape the sushi program, set station standards, and mentor junior kitchen staff from day one. The ideal candidate combines technical sushi expertise with strict food‑safety discipline, a refined eye for presentation, and the ability to perform consistently in a fast‑paced, high‑volume environment.


Role Overview

As Chef de Partie (Sushi) you will own the sushi station and be responsible for preparing high‑quality sushi and Japanese‑style dishes to Kapitol standards. You will collaborate closely with the Head Chef and culinary team to develop recipes, manage ingredient sourcing, and ensure flawless execution during soft openings, VIP previews, and full service. This pre‑opening role requires leadership, precision, and a commitment to culinary excellence.


Duties and Responsibilities

  • Prepare sushi and Japanese dishes with precision, including nigiri, sashimi, maki, temaki, and specialty rolls.
  • Manage the sushi station during service: portioning, plating, timing, and quality control to ensure consistency.
  • Oversee fish handling and storage: inspect deliveries, maintain correct temperatures, and ensure traceability and freshness.
  • Execute knife work and mise en place to the highest standards; maintain sharpness and hygiene of all tools.
  • Develop and refine menu items in collaboration with the Head Chef, contributing seasonal and promotional concepts.
  • Train and mentor junior sushi staff on technique, presentation, hygiene, and station discipline.
  • Ensure strict adherence to food safety protocols for raw fish and ready‑to‑serve items, including cross‑contamination prevention.
  • Coordinate with service teams to manage ticket flow, special requests, and timing of courses.
  • Assist with inventory control: receive deliveries, rotate stock, monitor usage, and report shortages or quality issues.
  • Maintain equipment and cleanliness: ensure sushi counters, refrigeration, and prep areas meet sanitation standards.
  • Participate in pre‑opening activities such as menu tastings, trial shifts, and SOP development to optimize workflows.

Requirements

  • Proven experience as a sushi chef, Chef de Partie, or similar role in upscale or concept‑driven kitchens.
  • Formal sushi training or demonstrable expertise in Japanese culinary techniques and raw fish preparation.
  • Excellent knife skills and meticulous attention to portioning, texture, and presentation.
  • Strong knowledge of food safety standards related to raw seafood handling; HACCP or equivalent certification preferred.
  • Ability to work under pressure with consistent speed, accuracy, and composure during peak service.
  • Leadership and coaching ability to train junior cooks and maintain station discipline.
  • Flexible availability including evenings, weekends, and public holidays.
  • Professional presentation and teamwork mindset.
  • Valid UAE work authorization or clear visa status; include visa details in your application.
