GAIA Restaurants — Mayfair is seeking a skilled Sous Chef to join a high‑energy Mediterranean kitchen where precision, seasonality, and flavour are paramount. This role supports the Head Chef in delivering consistently excellent dishes across service, contributes to menu development, and helps lead a disciplined, creative brigade. Duties and Responsibilities

  • Lead kitchen service alongside the Head Chef; ensure timing, quality, and presentation across all covers.
  • Supervise and train line cooks and commis chefs; maintain clear station responsibilities and standards.
  • Execute menu items to exacting specifications, ensuring consistency in flavour, portioning, and plating.
  • Support menu development with seasonal, Mediterranean-inspired dishes and specials.
  • Manage mise en place and prep schedules to meet service demands efficiently.
  • Enforce food safety and hygiene standards, including HACCP and COSHH compliance.
  • Control food cost and waste through portion control, stock rotation, and supplier liaison.
  • Step in for the Head Chef when required, including running services and leading kitchen briefings.
  • Coordinate with front-of-house on timing, special requests, and guest feedback to ensure seamless service.

Requirements

  • Experience: Minimum 3–5 years in high‑end, fast‑paced kitchens with demonstrable supervisory experience.
  • Culinary skill: Strong technical foundation in Mediterranean techniques, seafood, pasta, and seasonal produce.
  • Leadership: Calm, clear communicator who leads by example and develops team capability.
  • Operational knowledge: Competent in stock control, ordering, rota planning, and basic food cost management.
  • Standards: Impeccable attention to detail, consistency under pressure, and commitment to kitchen cleanliness.
  • Personal qualities: Resilient, proactive, creative, and guest-focused.
  • Availability: Flexible hours including evenings, weekends, and public holidays.
  • Eligibility: Right to work in the UK.
