La Brioche Café et Pâtisserie is recruiting an experienced Restaurant Manager for its new Dubai location. This senior role combines people leadership, commercial ownership, and hands‑on service management to deliver a signature café and patisserie experience. You will run daily FOH operations, lead and develop a customer‑facing team, protect brand standards, and drive sales and profitability while ensuring exceptional guest satisfaction in a fast‑paced environment.


Duties and Responsibilities

  • Operational Leadership
    • Oversee daily front‑of‑house operations, opening and closing procedures, and shift handovers.
    • Ensure consistent service standards, timing, and presentation across all covers.
  • Team Management and Development
    • Recruit, train, coach, and schedule FOH staff (supervisors, waiters, baristas).
    • Run briefings, performance reviews, and on‑shift coaching to raise standards and morale.
  • Guest Experience and Service Quality
    • Maintain high levels of guest satisfaction; handle complaints professionally and follow up to resolution.
    • Implement upselling and guest engagement techniques; ensure staff product knowledge.
  • Commercial and Financial Accountability
    • Monitor daily sales, labour costs, and basic P&L metrics; implement actions to meet targets.
    • Control cash handling, POS reconciliation, and shift reporting.
  • Inventory and Supplier Coordination
    • Manage FOH stock levels (beverages, disposables, service items); coordinate with Store Keeper and suppliers.
    • Support menu costing and portion control initiatives.
  • Health, Safety and Compliance
    • Enforce hygiene, food safety, and workplace safety standards; ensure HACCP procedures are followed.
    • Maintain licensing, permits, and documentation required for FOH operations.
  • Marketing and Local Activation
    • Work with marketing to execute promotions, seasonal launches, and local partnerships.
    • Represent La Brioche at community or brand events when required.

Requirements

  • Experience
    • Minimum 3+ years in F&B management with proven experience running a café, patisserie, or casual dining outlet; multi‑outlet or hotel experience is an advantage.
  • Skills and Competencies
    • Strong leadership and people development skills; confident coach and mentor.
    • Commercial acumen: ability to read basic P&L, control labour and stock costs, and drive sales.
    • Excellent guest service, problem solving, and conflict resolution skills.
    • Proficient with POS systems and basic reporting tools.
  • Qualifications and Attributes
    • Hospitality diploma or relevant qualification preferred but not mandatory.
    • Professional presentation, punctuality, and resilience under pressure.
    • Fluent English; additional languages are an advantage.
    • Eligible to work in the UAE and available for flexible shifts including weekends and public holidays.
