The DCDP role is both practical and developmental — it offers exposure to multiple sections (hot, cold, pastry, or garde manger), opportunities to lead small task groups, and clear pathways to progress to Chef de Partie roles as you demonstrate skill, initiative, and leadership.


Duties and Responsibilities

  • Prepare mise en place for service including chopping, portioning, marinating, and staging ingredients to the CDP’s and Sous Chef’s specifications.
  • Cook and finish menu items according to recipes, portion guides, and plating standards; ensure taste, texture, and temperature consistency.
  • Assist the CDP in daily station management, including delegating simple tasks to commis, monitoring timing, and coordinating with the pass/expeditor.
  • Maintain strict food safety and hygiene practices: correct storage temperatures, labeling, FIFO rotation, and cleaning schedules for your station.
  • Execute basic to intermediate cooking techniques (sautéing, grilling, baking, frying, blanching, sauce preparation) with accuracy and speed.
  • Follow allergen protocols and handle special dietary requests with care and correct communication to service staff.
  • Monitor ingredient usage and waste; report shortages, quality issues, or variances to the CDP and kitchen supervisor promptly.
  • Support the pastry, cold, or hot section when required; rotate through stations as part of cross-training and skills development.
  • Participate in prep for daily service, buffets, banquets, and special events as scheduled.
  • Clean and maintain kitchen equipment and tools; report malfunctioning equipment to engineering or kitchen leadership.
  • Assist in receiving and checking deliveries for your section, ensuring correct quantities and quality before storage.
  • Attend pre-shift briefings and follow operational instructions, shift handovers, and feedback from senior chefs.
  • Demonstrate professional conduct: punctuality, adherence to uniform standards, and cooperation with the brigade.

Requirements

  • Minimum 1–2 years’ experience in a professional kitchen as a Commi, Commi II, or similar role; prior exposure to Turkish or Mediterranean cuisine is advantageous.
  • Basic culinary qualification or completion of an apprenticeship is preferred but not mandatory with strong practical experience.
  • Solid knife skills, basic but reliable cooking technique knowledge, and the ability to follow recipes and portion controls.
  • Understanding of food safety principles and HACCP standards; food handler certification is an asset.
  • Ability to work under pressure, adapt to changing service demands, and maintain consistency during peak periods.
  • Team player attitude with a willingness to learn, accept feedback, and train in multiple stations.
  • Good communication in English; other languages are a plus.
  • Flexible availability for early mornings, late evenings, weekends, and public holidays as per roster requirements.
  • Physical stamina for standing long shifts and safely handling kitchen workloads.
