Open Positions, Duties & Requirements

1. Head Waiter / Head Waitress

  • Key Duties: Lead a dedicated station, manage table flow, mentor junior staff, and provide expert menu recommendations.
  • Requirements: 3+ years of leadership in luxury dining; exceptional English communication and a proven track record of managing high-profile VIP guests.

2. Bartender

  • Key Duties: Craft signature Mediterranean-inspired cocktails, maintain bar organization, and engage guests with charisma and technical speed.
  • Requirements: Deep knowledge of mixology and spirits; ability to work efficiently in a high-volume, high-pressure environment with a polished demeanor.

3. Sommelier

  • Key Duties: Curate wine experiences, manage the cellar, and provide sophisticated pairings that complement Greek-Mediterranean flavors.
  • Requirements: Certified Sommelier (WSET Level 3 or equivalent); extensive knowledge of Old World and Mediterranean wines.

4. Food Runner

  • Key Duties: Act as the vital link between the kitchen and the dining room, ensuring dishes are delivered at the perfect temperature and presented according to GAIA standards.
  • Requirements: High physical stamina, a “sense of urgency,” and basic knowledge of fine-dining etiquette.

General Duties and Responsibilities

  • Guest Engagement: Provide a warm, professional welcome and maintain a high level of engagement throughout the dining journey.
  • Operational Excellence: Execute service steps with precision, ensuring the GAIA standards of “refined speed” are met.
  • Product Knowledge: Maintain an expert-level understanding of our ingredients, sourcing, and preparation methods.
  • Collaboration: Work seamlessly across departments to ensure fluid communication and timely delivery of orders.

General Requirements

  • Experience: Previous experience in high-end, high-volume fine dining (DIFC experience is a significant plus).
  • Professionalism: Impeccable grooming standards and a sophisticated, confident demeanor.
  • Adaptability: The ability to remain calm and efficient under pressure.
  • Passion: A genuine love for hospitality and a deep understanding of luxury service standards.
