Sous Chef — Job Posting Summary

We are seeking a skilled, proactive Sous Chef to support our culinary leadership, maintain consistent food quality, and drive kitchen efficiency in a high-volume, creative restaurant environment in Dubai. This role balances hands-on cooking, team supervision, and operational responsibility.


Duties and Responsibilities

  • Kitchen Leadership: Supervise line cooks and prep teams; assign stations and ensure smooth service flow.
  • Food Quality and Consistency: Execute menu items to recipe standards; monitor plating, portioning, and presentation.
  • Prep and Production: Oversee mise en place, prep schedules, and daily production to meet service demands.
  • Training and Development: Coach staff on techniques, timing, and standards; run line trainings and tastings.
  • Inventory and Cost Control: Assist with ordering, stock rotation, par levels, and waste reduction to meet food cost targets.
  • Menu Support: Collaborate on menu development, specials, and seasonal offerings; test recipes and refine techniques.
  • Health and Safety Compliance: Enforce sanitation, HACCP, and food safety procedures; maintain a clean, organized kitchen.
  • Operational Support: Manage shift handovers, prep lists, and communication with front-of-house and management teams.
  • Problem Solving: Troubleshoot service issues, adapt to changing volumes, and maintain composure under pressure.

Requirements

  • Experience: 3–5 years of professional culinary experience with at least 1–2 years in a supervisory role in a high-volume restaurant, hotel, or similar.
  • Culinary Training: Culinary diploma or equivalent preferred; strong classical technique and modern plating skills.
  • Technical Skills: Excellent knife skills, station management, timing, and ability to execute multiple dishes simultaneously.
  • Food Safety: Current food safety certification and thorough knowledge of sanitation standards.
  • Leadership: Proven ability to train, motivate, and manage kitchen staff; clear communicator and team player.
  • Commercial Awareness: Familiarity with inventory systems, portion control, and basic food cost calculations.
  • Physical Requirements: Ability to work long, standing shifts and lift up to standard kitchen loads.
  • Availability: Flexible schedule including nights, weekends, and holidays.
  • Language: Proficient in English; additional languages are a plus.
