SUSHISAMBA Dubai is recruiting a dedicated Junior Sous Chef – Sushi to join a high‑performance kitchen brigade and support the sushi pass in delivering precise, artful dishes that reflect our Japanese‑Brazilian‑Peruvian fusion identity. This is a hands‑on role for a culinary professional who is passionate about fish quality, rice technique and consistent presentation, and who wants to develop under experienced sushi leadership. You will work closely with the Head Sushi Chef and Sous Chef to execute daily service, maintain mise en place, and help train junior cooks while upholding strict food‑safety and hygiene standards. The role suits someone eager to refine technical skills, contribute to menu development, and thrive in a fast‑paced, detail‑driven environment where speed and finesse are equally valued.


Duties and Responsibilities

  • Service Execution: Prepare and plate sushi and sashimi to recipe and presentation standards during lunch and dinner services.
  • Mise en Place: Oversee daily prep for the sushi station, including rice preparation, fish portioning, garnishes and sauces.
  • Quality Control: Inspect incoming fish and ingredients for freshness and correct storage; maintain station consistency and portion control.
  • Team Support: Assist the Head Sushi Chef and Sous Chef with training junior kitchen staff and delegating tasks during service.
  • Hygiene and Safety: Ensure strict compliance with HACCP, food‑safety procedures and kitchen sanitation; manage correct labeling and rotation.
  • Inventory and Ordering: Monitor stock levels for the sushi station, report shortages, and assist with receiving and storing deliveries.
  • Menu Development: Contribute ideas for specials and seasonal dishes; help test and refine new recipes under chef supervision.

Requirements

  • Experience: Minimum 2–4 years working in a sushi kitchen or Japanese restaurant; prior experience at a high‑volume or upscale venue preferred.
  • Technical Skills: Strong knife skills, fish handling and butchery knowledge, rice preparation expertise and familiarity with sushi plating techniques.
  • Qualifications: Culinary diploma or equivalent experience is advantageous; food‑safety certification required or willingness to obtain.
  • Attributes: Meticulous attention to detail, ability to work quickly under pressure, strong teamwork and clear communication.
  • Availability: Flexible to work evenings, weekends and public holidays; able to commit to scheduled shifts.
  • Legal: Right to work in the UAE or valid work permit.
