Duties and Responsibilities

Assistant Restaurant Manager

  • Oversee daily front-of-house operations; ensure smooth service flow and exceptional guest experiences.
  • Coach and develop service staff; run briefings and performance reviews.
  • Manage reservations and seating to optimize covers and guest satisfaction.
  • Handle guest feedback and recovery with professionalism and speed.
  • Support inventory control and cost management for front-of-house supplies.

Sous Chef

  • Lead kitchen operations in the Head Chef’s absence; maintain quality and consistency.
  • Execute menu items to exacting standards for flavour, timing, and presentation.
  • Supervise and train line cooks; enforce hygiene and safety standards.
  • Contribute to menu development with seasonal, Mediterranean-inspired dishes.
  • Monitor food cost, waste, and stock rotation.

Junior Sous Chef

  • Support the Sous Chef and Head Chef on service and prep.
  • Prepare components and dishes to specification during busy covers.
  • Maintain mise en place and ensure station readiness.
  • Assist with training junior kitchen staff and uphold cleanliness standards.
  • Participate in quality control and portion consistency checks.

Requirements

  • Experience: Minimum 3–5 years in high-end, fast-paced restaurants; supervisory experience required for managerial and sous roles.
  • Leadership: Proven ability to lead with confidence and humility; strong coaching and communication skills.
  • Technical skill: Deep knowledge of Mediterranean cuisine for kitchen roles; polished service standards for front-of-house.
  • Operational competence: Familiarity with inventory, cost control, and health & safety regulations.
  • Personal qualities: Detail-oriented, resilient under pressure, guest-focused, and committed to continuous improvement.
  • Availability: Flexible hours including evenings, weekends, and public holidays.
  • Language: Professional English; additional languages an advantage.
