As a Chef de Partie (Hot/Fryer) at Ape Hospitality, you will be responsible for overseeing and managing the hot section of our kitchen, specifically focusing on fryer operations. You will be expected to prepare, cook, and present dishes according to the restaurant’s standards, ensuring quality, consistency, and presentation. You will also be responsible for maintaining a clean and organized workstation, managing inventory for your section, and assisting with team training and development. This role requires a passionate, detail-oriented chef who thrives in a fast-paced, high-pressure environment.

Key Responsibilities:

  • Manage and oversee the fryer section of the kitchen, ensuring dishes are prepared and cooked to the highest standard.
  • Prepare, cook, and present food in accordance with the restaurant’s menu and recipe standards.
  • Ensure that all items are cooked to perfection, maintaining consistency in taste and presentation.
  • Monitor fryer operations, ensuring the oil is maintained and food is cooked at the right temperature and for the correct duration.
  • Assist in creating new menu items or seasonal specials based on fryer techniques.
  • Maintain cleanliness and organization of the hot section, ensuring all cooking equipment and utensils are sanitized and in good condition.
  • Manage inventory for the hot/fryer section, ensuring proper stock levels and minimizing waste.
  • Train and support junior kitchen staff, helping to develop their skills and knowledge in fryer operations.
  • Ensure food safety standards and hygiene protocols are consistently followed.
  • Work closely with other kitchen staff to ensure the smooth running of the kitchen during service.

Requirements:

  • Proven experience as a Chef de Partie in a hot kitchen or fryer section.
  • Strong knowledge of hot cooking techniques, particularly fryer operations.
  • Excellent communication and team management skills.
  • Ability to work under pressure in a fast-paced environment while maintaining high standards of quality.
  • Understanding of food safety and hygiene regulations.
  • Strong organizational skills and attention to detail.
  • Ability to train and mentor junior kitchen staff.
  • Flexibility to work evenings, weekends, and holidays as required.
