As a Commi Pastry you will work under the guidance of senior pastry chefs to prepare, bake, and finish a wide range of products including viennoiserie, plated desserts, tarts, entremets, and frozen desserts. The position offers structured on-the-job training, exposure to professional pastry workflows, and opportunities to develop technical skills in dough handling, lamination, chocolate work, sugar artistry, and precise plating. Duties and Responsibilities

  • Prepare mise en place for pastry production including weighing, portioning, and pre-mixing ingredients to pastry recipes.
  • Produce viennoiserie, doughs, batters, creams, fillings, and bases to specification with accurate measurements and timing.
  • Operate ovens, proofing cabinets, blast chillers, mixers, tempering machines, and other pastry equipment safely and efficiently.
  • Execute basic to intermediate pastry techniques: lamination, lamination troubleshooting, choux preparation, custards, curds, mousses, and glaze finishes.
  • Assemble and finish plated desserts and dessert displays according to plating guides and quality standards.
  • Perform basic chocolate tempering, coating, and simple moulding under supervision.
  • Follow standard recipes, portion control guides, and yield calculations to minimise waste and control food cost.
  • Maintain strict temperature control for perishable components and follow correct storage and labelling procedures using FIFO.
  • Assist with production planning for daily service, high-volume breakfast shifts, and special events such as banquets and private functions.
  • Clean and sanitise workstations, tools, and equipment after each shift and participate in daily and weekly deep-clean schedules.
  • Support inventory checks for pastry ingredients and report shortages, irregularities, or quality concerns to the pastry chef.
  • Follow allergen handling protocols and ensure clear communication of dietary requests to the service team.
  • Participate in training sessions, tastings, and pre-shift briefings; accept feedback and incorporate improvements into daily practice.

Requirements

  • Minimum 6 months to 2 years’ experience in a professional pastry kitchen, bakery, or patisserie preferred.
  • Basic culinary or pastry qualification is an advantage but practical experience and a demonstrable willingness to learn are considered.
  • Fundamental knife skills and familiarity with standard pastry tools and equipment.
  • Ability to follow recipes precisely, measure accurately, and maintain consistent portion sizes.
  • Basic understanding of food safety, hygiene practices, and correct storage procedures.
  • Strong time-management skills and the ability to work under pressure during peak service periods.
  • A collaborative, teachable attitude with good communication skills in English; additional languages are a plus.
  • Willingness to work shifts, early mornings, weekends, and public holidays as required.
  • Physical ability to stand for long periods, lift and carry moderate weights safely, and work in temperature-controlled environments.
