Chef de Cuisine (Banquet) – Montgomerie

Montgomerie is strengthening its culinary leadership team and is seeking a highly skilled Chef de Cuisine – Banquet to oversee the execution of premium, large‑scale banquet operations. This role suits a dynamic culinary leader who thrives in high‑volume environments and is passionate about delivering exceptional event dining experiences.


Duties & Responsibilities

  • Lead day‑to‑day banquet kitchen operations, ensuring flawless preparation, production, and presentation.
  • Develop and refine banquet menus in alignment with brand standards and event requirements.
  • Supervise and train the banquet culinary team, ensuring consistency, discipline, and high performance.
  • Coordinate closely with the Head Chef, Events, and Service teams to ensure seamless event execution.
  • Maintain strict adherence to food safety, hygiene, and HACCP protocols.
  • Oversee inventory, ordering, and cost control to meet budgetary targets.
  • Conduct tasting sessions, quality checks, and continuous improvement initiatives.
  • Ensure all equipment, workstations, and production areas are maintained to the highest standards.
  • Support innovation through seasonal menu updates and creative culinary solutions for diverse event types.

Requirements

  • 5+ years of experience in banquet or high‑volume culinary operations, with at least 1–2 years in a supervisory or sous chef role.
  • Strong technical skills in international cuisine, large‑batch production, and event‑specific menu planning.
  • Proven leadership ability with a track record of developing and motivating culinary teams.
  • Excellent communication, organizational, and time‑management skills.
  • Ability to perform under pressure and deliver consistent results during peak event periods.
  • Culinary degree or equivalent professional certification; HACCP certification is an advantage.
