As Captain Waiter at Nemo by Swot Hospitality, you will be a visible service leader in one of the city’s most distinctive dining destinations—an elegant restaurant framed by a panoramic underwater aquarium and a refined Eurasian menu. You will supervise floor operations during your shift, mentor service staff, and ensure every guest receives polished, timely, and memorable hospitality. This role requires a confident front‑of‑house professional who combines impeccable service technique with calm leadership, strong product knowledge, and a genuine desire to elevate guest moments. You will partner closely with the Restaurant Manager, Bar Manager, and kitchen team to coordinate timing, manage large bookings, and maintain the high standards that define Nemo.
Duties and Responsibilities
- Shift Leadership — Lead the service team during assigned shifts; open and close sections; ensure smooth service flow and timely table turns.
- Guest Relations — Greet and seat guests when required; manage VIPs and special requests; resolve guest issues with discretion and a service-first mindset.
- Team Coaching — Mentor waiters and junior staff on service standards, upselling techniques, and product knowledge; conduct on-shift training and feedback.
- Service Execution — Oversee order accuracy, plating presentation, and timing between courses; coordinate with kitchen and bar for seamless delivery.
- Standards and Compliance — Enforce hygiene, safety, and licensing requirements; ensure side stations and service areas are stocked and organized.
- Reservations and Seating — Assist with reservation management, seating plans, and large-party coordination to optimize covers and guest experience.
- Reporting — Complete shift handovers, incident reports, and communicate guest feedback to management.
Requirements
- Experience — Minimum 2–4 years in fine dining or upscale casual service, with prior supervisory or captain experience preferred.
- Skills — Strong leadership, clear communication, polished table service technique, and confident upselling ability.
- Knowledge — Excellent menu and beverage knowledge; ability to recommend pairings and explain dishes.
- Technical — Comfortable using POS and reservation systems.
- Qualifications — Food safety certification preferred; responsible service of alcohol certification where applicable.
- Personal Attributes — Poised under pressure, detail oriented, team player, and guest‑centric.
- Availability — Flexible to work evenings, weekends, and public holidays.
- Language — Fluent English; additional languages are an advantage.
