As Captain at Nemo by Swot Hospitality, you will be a senior on‑floor leader responsible for delivering refined, consistent service in a high‑profile dining destination set against a panoramic underwater aquarium. You will supervise a section of the dining room, mentor junior staff, and act as the primary point of contact for guests during service. This role requires a polished service professional who combines technical table skills with calm leadership, strong product knowledge, and a commercial mindset. You will coordinate closely with the Restaurant Manager, Head Waiter, Bar Manager, and kitchen team to ensure timing, presentation, and guest satisfaction meet Nemo’s exacting standards.
Duties and Responsibilities
- Section Leadership — Manage your assigned section during shifts; open and close tables; ensure smooth timing between courses.
- Guest Experience — Welcome and seat guests when required; manage VIPs and special requests; lead guest recovery with discretion and warmth.
- Service Execution — Deliver high‑standard table service including order taking, course timing, plating checks, and final bill presentation.
- Team Mentoring — Coach and support waiters and junior staff on service technique, upselling, and product knowledge during shifts.
- Coordination — Liaise with kitchen and bar to synchronize course timing, special menus, and large bookings.
- Standards and Presentation — Maintain mise en place, side stations, and service equipment; ensure cleanliness and readiness.
- Reservations Support — Assist with seating plans and table allocations to optimize covers and guest flow.
- Reporting — Complete shift handovers, report guest feedback, and log incidents or operational notes.
Requirements
- Experience — Minimum 2 years in fine dining or upscale hospitality with demonstrated table service expertise.
- Skills — Exceptional table service technique, confident upselling, clear communication, and the ability to lead by example.
- Knowledge — Strong menu and beverage knowledge with the ability to recommend pairings and explain dishes.
- Technical — Comfortable using POS and reservation systems.
- Qualifications — Food safety certification preferred; responsible alcohol service certification advantageous.
- Personal Attributes — Poised under pressure, detail oriented, professional presentation, and a collaborative team player.
- Availability — Flexible to work evenings, weekends, and public holidays.
- Language — Fluent English; additional languages are an advantage.
