Introduction and summary

We are recruiting reliable, energetic Runners to join the pre‑opening front‑of‑house team for a licensed standalone venue in Dubai. Runners are essential to smooth service: you’ll ensure timely delivery of food and beverages, support wait staff and kitchen communication, and help maintain a clean, safe dining environment. This role is ideal for candidates who work well under pressure, have strong attention to detail, and take pride in being the backbone of a high‑tempo service team. Pre‑opening candidates will participate in rehearsals and training to ensure operational readiness for launch.

Key purpose of the role

  • Deliver food and beverages promptly and accurately between kitchen and floor to maintain service flow and guest satisfaction.
  • Support wait staff and commis by clearing, resetting and restocking covers quickly and correctly.
  • Maintain FOH presentation and safety through attentive station management and proactive support tasks.

Main duties and responsibilities

  • Collect and deliver plated dishes and beverages from kitchen and bar to guests’ tables accurately and promptly.
  • Carry multiple items safely on trays; manage route planning during peak periods to maintain speed and avoid congestion.
  • Clear finished plates and glassware, buss tables efficiently and reset covers to the venue’s presentation standards.
  • Replenish service stations with cutlery, condiments, napkins and glassware; ensure stations remain fully stocked during service.
  • Assist with basic mise en place tasks: portioning garnishes, preparing side plates and labelling service items as instructed.
  • Communicate effectively with kitchen and service teams about order progress, missing items or service issues; escalate delays to supervisors.
  • Monitor public area presentation: remove litter, wipe spillages and ensure guest walkways are clear and safe.
  • Follow opening/closing checklists and complete assigned cleaning duties, including stack‑ups and runner station maintenance.
  • Adhere to health, safety and food hygiene standards at all times; report hazards, breakages or incidents immediately.
  • Participate in pre‑opening rehearsals, briefings and practical training sessions to learn service sequences and venue procedures.

Candidate requirements

  • 6 months to 2 years’ hospitality experience preferred; experience in busy restaurants, cafés or licensed venues advantageous.
  • Physically fit and able to stand for long periods, carry trays and lift moderate weights safely.
  • Good communication skills in English; additional languages beneficial for guest interactions.
  • Strong teamwork mindset, punctuality and a positive, can‑do attitude.
  • Able to work flexible shifts including evenings, weekends and public holidays.
  • Willingness to learn, accept coaching and adapt quickly during pre‑opening and live service periods.
  • Valid UAE work eligibility and readiness to provide references where requested.

Training, progression and what sets top candidates apart

  • Structured on‑the‑job training with practical coaching from Head Waiter and Supervisors.
  • Cross‑training opportunities across commis waiter and waiter duties for motivated team members.
  • Clear progression paths: Runner → Commis Waiter → Waiter → Team Leader for consistent performers.
  • Top candidates demonstrate strong situational awareness, excellent tray skills, calm under pressure and a proactive approach to supporting colleagues.
